Cinco de Mango

For something fruity and fun with your guacamole and enchiladas today, try this recipe for a Mango Margarita. It comes courtesy of the National Mango Board (who knew?) and utilizes FRESH ingredients, not pre-packaged mixes:

Cinco de Mango Margarita
2 ripe mangoes, cubed
Juice from 2 limes
1 cup tequila (silver or white)
2 cups ice
Ginger syrup** to taste

Place all ingredients in a blender and pulse until smooth. Garnish with a lime wedge, if desired. Makes 4 Margaritas.

**To make ginger syrup, add 1 cup sugar and 1 cup water to a pot. Let come to a boil, and then add a 1 inch piece of fresh, peeled ginger. Let steep for 30 minutes. Remove ginger piece, and store the syrup covered in the refrigerator for up to a week.
