Negronis for New Year's Eve Eve
We're having some dear friends over for dinner tonight, and I've been trying to figure out what cocktails to serve before dinner. I've been finding myself reaching more and more for the bottle of Campari lately--maybe because its gorgeous red hue is ten shades of festive, or because it tends to really pair with all the citrus that's in season. Anyway, I've found 3 recipes that fit the bill (if our guests don't like the bitter red aperitif, then I guess it's back to square one...)

1 oz. Campari 1 oz. sweet red vermouth 1/2 oz. gin 4 oz. sparkling wine Orange peel for garnish
Combine Campari, vermouth and gin in a cocktail shaker filled with ice. Stir 50 times, and then strain into a cocktail flute. Add sparkling wine, and orange peel for garnish.

Juice from 1/4 of large grapefruit 1 1/2 oz. gin 3/4 oz. sweet red vermouth 1/2 oz. Campari Orange peel, for garnish
Combine all ingredients in cocktail shaker filled with ice. Shake vigorously, and then strain into a cocktail glass. Garnish with orange peel.

1/2 oz. Campari 1/2 oz. lemon juice 1/2 oz. orange liqueur 4 oz. Prosecco Orange peel, for garnish
Combine Campari, lemon juice and orange liqueur in a cocktail shaker filled with ice. Shake vigorously, and strain into cocktail glass. Garnish with orange peel.
