Fruity but serious


Though not a member of the flavored vodka set, I was pleasantly surprised with the flavor of SKYY Infusions Pineapple vodka when I tried it a few months ago. It has a true-to-life, not too sweet pineapple flavor, with a nice line of tartness to keep it from being treacly (my new favorite synonym for cloying...)

But I was disappointed when I started to look for cocktail recipes that included it. Many of the ones that kept popping up also had pineapple juice in them. I don't understand the point of that. I mean, if you are going to put pineapple juice in a pineapple vodka-based drink, why not just use good old regular vodka???

I've also recently been experimenting with Chartreuse, and I got my hands on a ton of cocktails that include either the yellow or green versions of the herbal elixir. One that used SKYY pineapple struck my eye:

1 oz Yellow Chartreuse 1 oz Skyy Pineapple Vodka .25 oz Orange Juice .25 oz Simple Syrup Juice from ½ lime pressed

Shake and strain, serve in a chilled cocktail glass.

I tripled this recipe for two of us, and served it up in our favorite Crate and Barrel dizzy cocktail glasses. It's fruity and tangy, but the Chartreuse adds another layer that would be lacking if it just had vodka. Next time, I think I'll go easier on the simple syrup, or omit it entirely. I garnished the drink with an orange peel.
